Cuban Sandwich Pie

I made this recipe years ago that I saw from the charismatic Guy Fieri from Food Network.  And it was delicious!!  Since we have been on a meat pie kick lately, I thought this recipe would be a perfect addition.  I love cuban sandwiches.  But Colorado restaurants don’t seem to serve up the traditional sandwich, and it is almost impossible to get cuban bread around here unless you make it yourself.  So, I found this recipe to satisfy the craving!  The night before I put a Pork Picnic Shoulder on low in the crock pot so it would be ready for Girlfriends in the Kitchen.

Then, we chopped onions, garlic, green peppers and tomatoes to make the *Sofrito.

*Sofrito is a combination of aromatic ingredients which have been cut in very small pieces, and slowly sauteed or braised in cooking oil for 15-30 minutes.

While we were chopping veggies & cooking sofrito, we browned the pie crusts in the oven.  Then, layered the bottom with shredded swiss cheese.

Then you add the pulled pork, sofrito, more swiss cheese and ham slices.

We mixed yellow mustard with whipping cream and in no time it had thickened up.  We spread this all over the ham slices and topped with shredded parmesan cheese.

At this point some girlfriends covered their dish to take home and will add the tomato & pickle slices after it is cooked.  Also, the recipe calls for putting another layer of pie crust on top then baking it and adding the tomatoes & pickles after.  We omitted the 2nd pie crust.

I decided to go ahead and add the pickles & tomatoes before I baked it.

I baked mine at 350 F for 25 minutes and served it with Mojo Sour Cream (recipe below).

Ingredients

  • Refrigerated Pie Crust Dough
  • 1/2 cup yellow onions, diced
  • 1/2 cup green bell peppers, diced
  • 1/4 cup garlic, minced, plus 1 tablespoon
  • 1/2 cup Roma tomatoes, diced
  • 8 ounces Swiss cheese, shredded
  • 7 ounces pulled pork
  • 5 ounces deli-style ham, sliced
  • 1/2 cup heavy cream
  • 4 tablespoons mustard, your preference – we used Yellow
  • 4 tablespoons Parmesan, freshly shredded or grated
  • dill pickles, thin sliced
  • 1 tomato, thin sliced
  • Mojo Sour cream (Alla Munee), recipe follows

Mojo Sour cream (Alla Munee):

  • 1 1/2 cups sour cream
  • 1 tablespoons garlic, minced
  • 4 tablespoons lime juice
  • 4 tablespoons orange juice
  • 1 teaspoon dried oregano

Mix in bowl and refrigerate for 1 hour.
